A stay at The Bayleaf Hotel Intramuros is not complete without dining at 9 Spoons at the Penthouse of the said establishment.
9 Spoons is almost synonymous with its heritage dishes that include Bayleaf bagnet, crispy sisig, hipon sa aligue, all day beef tapa, and Bayleaf adobo sa puti.
I almost ordered crispy sisig for dinner but had a change of heart at the last second and decided to feast on Bayleaf bagnet. The Bayleaf bagnet looked phenomenal but it was its aroma that consumed some of my senses. It reached me before the plate hit the table. It was a house special fried pork belly that sat on top of pinakbet but was beneath a good helping of pork cracklings. The pork cracklings were crisp and cracked at every bite. The bagnet itself had crisp pork skin yet remained juicy and tender. It was savory and each morsel was a mouthful of bursting flavor.
The following morning, I partook of the breakfast buffet served at 9 Spoons. The breakfast buffet at 9 Spoons was not lavish but it was sufficient to stave off early morning hunger. There was a selection of cereals, bread and spread, eggs, viands, and drinks for the expeditious risers.
As I munched my food, I enjoyed the view afforded by the floor-to-ceiing glass windows – I regarded the greenery of the Intramuros Golf Course and the not-yet-too-polluted horizon over Manila.
