Tabla by The Selah Garden Hotel (Pasay City)

Tabla is the main dining option at The Selah Garden Hotel in Pasay City. I presume that this restaurant is named after the large block of wood that dominates the center of the place.

Tabla is located beside the pool and is reachable from the front desk via a narrow and short alley. The side opposite of the pool has a wall of greenery called the Manuel Wall. The Manuel Wall Modular System is a family-based ecological diversion and recycling of waste. It is UV-resistant and environment friendly where ornamental and edible plants can be grown. It is a space saver and can be called farm or food wall. This verdant panel is a great contrast from the blueness of the pool.

Like The Selah Garden Hotel, Tabla is a compact space yet there is no sense of denseness in the area. The tables are arranged in a way that the diners feel comfortable.

Tabla’s menu does not boast of a great variety of dishes. There is a dearth of fish and seafood options and the vegetable dishes leave me wanting more.

Sinigang na Baboy, P310.00 (US $6.05). This Filipino comfort food is pork meat that is cooked in tamarind soup base until tender. Slices of native vegetables are added. I liked this sinigang na baboy because it was a welcome sight in a rainy evening. The broth was hot enough and had a strong taste of tamarind flavor. The pork slices were almost devoid of fat and were cooked well. The vegetables retained their crispness and were sliced into bite-size pieces.
Liempo Negra, P187.00 (US $3.65). This is grilled pork belly coated with super secret Selah ingredients with a hint of Old Bay flavor. The belly was tender and succulent but I could not detect noticeable flavor.
Special Sizzling Pork Sisig, P225.00 (US $4.39). This Filipino favorite is made with mixed pork ears, pork jaw, and liver cooked to perfection in delightful flavor and taste topped with crisp pork cracklings and egg. The pork was good but it had a surfeit of mayonnaise. The superfluous amount and creaminess of the mayonnaise concealed all the “delightful flavor” that was supposed to be there. I had one spoonful of this and gave up.
