Pardon my ignorance, but I thought that bibingka was the baked rice cake that Ferino’s offers or the type that Tibiao Bakery baked to perfection. I never thought that bibingka looks like biko.
Mang Domeng’s Bibingka showed me that there is a bibingkang malagkit, a sweet glutinous rice cake topped with latik or fried coconut curds and wrapped in fresh banana leaves. I may have seen this before but I always thought it was called biko.
Mang Domeng’s Bibingka tastes like and is as filling as biko. I bought six slices, I originally wanted to buy a dozen to get a box, shared five of them with my co-workers and ate one. One slice cost P10.00 (US $0.19).
Mang Domeng’s Bibingka had well-cooked glutinous rice and decent latik. My mind was not blown away by its flavor but it was worth the selling price. Surely, I will buy this again when I see it and when I am hungry.
