Ah Mah – Robinsons Magnolia (Quezon City)

Ah Mah Traditional Homemade Egg Sponge Cake is one of Malaysia’s and Singapore’s most celebrated egg sponge cake. It has branches in Thailand, Indonesia, and Cambodia.

Ah Mah Traditional Homemade Egg Sponge Cake officially started baking in the Philippines on July 21 when it opened its first branch in the country in Robinsons Magnolia.

Ah Mah Traditional Homemade Egg Sponge Cakes are melt-in-your mouth and fluffy pastries that have simple ingredients, which include egg (of course), milk, flour, corn oil, and sugar. They are freshly baked in the oven within the stall’s premises.

Ah Mah Philippines offers five varieties of egg sponge cake*: Original Sponge Cake, P150.00 (US $2.94), Cheese Sponge Cake, P180.00 (US $3.53), Chocolate Sponge Cake, P190.00 (US $3.72), Pandan Sponge Cake, P160.00 (US $3.14), and Ube Sponge Cake, P 180.00 (US $3.53).  Ube Sponge Cake is made with local ube halaya and is exclusive to the Philippines.

I bought two boxes, one original sponge cake because they say original is always the best, and chocolate sponge cake because I am a chocoholic. They had samples when I bought the cakes and I got to try original and pandan sponge cakes.

Ah Mah’s original sponge cake looked fun to eat because it was a little jiggly and appetizing to the eyes. The Ah Mah stamp was etched on top of the cake. The taste was pure (I know it is weird to use this word, but I stand by my choice of term), with a hint of egginess, and the texture like huggable cloud. It reminds me of my teddy bear, Pinky.

Ah Mah’s chocolate sponge cake was a surprise. It has tiny chocolate chips embedded in the loaf. The bottom part is layer of intense chocolate goodness that is the highlight of the entire pastry. It was yum!

Ah Mah’s pandan sponge cake was a little insipid in flavor. It was like eating flavorless air.

Since they have no preservatives they are best kept refrigerated and consumed within three (3) days. I have mine for over 54 hours as of this writing and they do not show any signs of decay or imperfections. They look and taste the same as when I bought them on Friday (I am writing this on Sunday night).
